Fondée en 1774 par Johann Birkenstock, l'entreprise familiale ne commence réellement à se développer qu'un siècle plus tard. En 1896, Konrad Birkenstock a conçu la première chaussure avec une semelle intérieure presque orthopédique qui a été vendue aux professionnels de la santé.
